Baked Platanitos

In Venezuela, and generally in Latin America, we eat a lot of green plantain: in soups or sancochos, fried or baked sweet plantain (the yellow one), and of course as tostones. Tostones are usually fried but I am not a friend of cleaning all that grease; therefore, I prefer to bake them. Plus it is a “healthier” version and you can either have them as a snack or as a side dish.

To be honest, the recipe on this post is for platanitos instead of tostones. In other words, platanitos are the small version of tostones. I originally wanted to make tostones but I ended up cutting the pieces a bit too thin (oops) but don’t worry I will add a post for tostones as well.

It’s really simple, try it out!


Au Venezuela et dans beaucoup pays d’Amérique Latine, nous mangeons pas mal de plantain (vert et jaune). Ma manière favorite de manger les plantains verts (salé) et en mode “Tostones ou Platanitos” – honnêtement je ne sais pas d’où vient le nom mais la chose plus importante à savoir est que c’est très bon. Voici la recette avec des photos. 

Ingredients:

– 3 green plantains (the greener the plantain, the “saltier” the platanitos) /3 plantains verts (vendu en supermarchés dans la section légumes), le plus vert => le plus salé
– 1 tablespoon of Coconut oil (you can use olive oil) /1 cuillère de huile de coco (ou huile d’olive)
– salt and pepper (pepper is optional) – you can add cayenne pepper if you want the Platanitos to be spicy /sel et poivre (ou cayenne si vous aimez bien le picant)

Directions (you’ll see the steps in pictures at the end of the post):

  1. Pre-heat the oven for 5 min at 200°C (~390°F) // pre-chauffer le four pour 5 min (200°C)
  2. Peel the plantains (the most annoying part) // éplucher les plantains 
  3. Cut the plantains into small pieces (around 0.5 to 1cm thick) // couper les plantains en petits morceaux
  4. Lay the cut platanitos on a non-stick baking sheet // placer les pieces coupes sur du papier cuisson 
  5. With a cooking brush, add the coconut oil  // ajouter de l’huile avec un pinceau de cuisine
  6. Bake for 15-20 min until golden. If you want them to be crispier, bake for an additional 5min but make sure they don’t burn // Laisser au four pendant 15-20 min. Si vous voulez les platanitos plus croustillants, ajoutez 5 min mais attention qu’ils ne brulent pas!
  7. Add salt (and pepper) to your taste // Ajouter sel (et poivre ou cayenne)
  8. Enjoy the platanitos // A table !!
